Adventures in Good Eating: Our Favorite Flourless Cookies

These are two of our family's favorite cookie recipes. They are nut butter based, flourless, and dairy free. So...you can feel slightly less guilty about them.
 
 
The peanut butter cookies I first had when I was pregnant with Lena. My best friend came to visit me in Alaska and when she did she made us the most amazing gluten free cookies! The recipe was found online here. We have been making them since then. The best part is they are so simple we almost always have all the ingredients on hand.
 
Peanut Butter Cookies:
1 c. peanut butter
1 egg
1c. sugar
tsp. vanilla
dash of salt
 

 
 
Preheat oven to 350 degrees. Roll out tbsp. size balls of dough on cookie sheet lined with parchment paper. Press each cookie ball down with fork x2. Place about an inch apart. Bake for 10 mins or until edges are golden.
Let cool for 5 mins.
 
The almond butter chocolate chip cookies are a new recipe to us, but already a fast favorite. The recipe is from last months Martha Stewart magazine. As soon as I saw the recipe I wanted to try it since it reminded me of our loved peanut butter cookies so much. Very simple ingredients again but a completely different cookies. These are probably my current favorite cookies ever. Chewy, chocolate, not too sweet. Perfect.
 
 
Almond Butter Chocolate Chip Cookies:
1 c. almond butter
(I like 3/4 almond butter 1/4 peanut butter)
1 c. mini chocolate chips
2 eggs
1/2 c. brown sugar
dash of salt
splash of vanilla
 

 
Preheat oven to 350 degrees. Place tbsp. size drops of dough about an inch apart on parchment lined cookie sheet. Bake for 10 mins or until edges are just turning golden.
Let cool and enjoy!

To the Bay 2/2

Our last weekend adventure contained a little nature hike in the woods.
One of our favorite and easiest to access beaches in Inverness is Heart's Desire. I spent so much time here as a child with my cousins and friends. Swimming in the bay, kayaking, hiking, building sand castles and climbing trees. So many happy memories here. It's on the bay, not the ocean so it is perfect for children and picnics. One of the many little trails that heads off from this point leads to the next sandy cove over, Indian Beach.

I waited all my life to see these little foot prints in the sand next to mine.
 










 
She was so excited to get out of her pack and explore everything that she could. She takes off, so sure, so strong, she walks straight into the water.
She digs, she collects, she examines.
She doesn't mind getting dirty or wet. She just wants to be free.
So that's how we try and let her be.

To the Bay 1/2

This weekend we had the opportunity to get away to our family home in Inverness.
A chance you cannot easily turn away from.
Our drive out was a little wild and very beautiful.
We saw magical clouds, all shades of green, a car on fire, lightning and a hale storm.
We went through all of  that to come out on the same side as the sun.



 
 
We stopped at our favorite Cowgirl Creamery for lunch.
 







 
When we got to the house we were happily greeted by family and hundreds and hundreds of daffodils.
 



 






 

 


 


 



 


 


 

 
Now we are home and our house is full of daffodils.
It was such a nice weekend getaway. I always leave Inverness with a happy heart.
There is something magic in the air there. It gets caught in your hair, in your memories.
