Adventures In Good Eating: Green Pasta

I come from a family full of excellent cooks. My father's side always cooking big family style Italian meals, using fresh ingredients from the garden and hardly ever using a written recipe or measurements. My mother's side owned a couple restaurants, The Nut Tree and The Coffee Tree. Comfort American food, but also amazing tamales, cookies, and marshmallow sauce! They were pioneers in a lot of ways, their style, the food served. The name of this blog is from The Nut Tree, but more on that another time.
 
 
 
The point is, I love to cook! It's in my blood. We grew up eating good food and I hope to do the same for my children. Having Lena has helped push us to eat better. Finding a true passion in eating healthy, fresh, and seasonal foods. Really being aware of what we are putting in our bodies. A huge part of why we join the Foggy River Farm family. Since Lena started eating solids we have tried to server her what we are having ourselves. But every once in awhile it's nice to make a meal just for her, that she will completely love, and that we can enjoy too if we want! Green Pasta is one of those. She loves it and is enjoying her vegetables without even knowing it.

 
 

Ingredients:
 
/pasta, your choice
boil, you know what to do here
 
/butter or ghee, about 2 tbs.
/flour, same amount as butter
 
melt butter in pan and then whisk in flour to make a roux
while butter melts,
 
/spinach, about 1/2c.
/butter nut squash, cubed + cooked, heavy 1/3c.
(a good thing to keep in the fridge to add to anything: eggs, muffins, smoothies, etc.)
/milk, roughly 1/3c.
/light coconut milk 1/3c.
 
four above blended together, should dip off spoon. add more of either milk if too thick
add green liquid goodness to roux 
 
 
/cheese, I use whatever is in the fridge. tonight about 1/3c. cheddar and 1/3c. ricotta
 
add cheese, keep on med-low heat and whisk until combined and until its to desired thickness.
add more milk and whisk if too thick.
add whatever you want.

The girls got skills with a fork, skills with eating.
 
This makes a pretty good amount of sauce, enough to feed all three of use really. Or just have a weeks worth of pasta for the babe's meals. I also like to add chopped fresh spinach at the end, adds that needed pop of green and Lena doesn't seem to mind.
