Adventures in Good Eating: Banana Nut Pancakes

Pancakes. I think they are the ultimate American breakfast food. Who doesn't love pancakes?! These pancakes are a bit different than the norm because they are not flour based. But rather have ground almonds and bananas to help make them light and fluffy. Truth be told, I don't like bananas. Actually I hate them. So I have never tried these myself, but they seem to be a hit for the rest of the family! Lena and Skyler both love them.
 It took me some time to come up with a pancake recipe that I felt good offering to my growing babe first thing in the morning. I'm also not a huge fan of flour, or any type of grain for that matter. But not because I don't like it (I love it all!!) but because I don't think it's the best thing for your body. For my body. More on that at another time. My point is, I like to feed Lena food that I believe is nourishing her body as much as possible. And I knew she would love pancakes so I wanted to make her healthy pancakes. After many rough mornings of failed - wont flip, too thick, too thin, wont even cook, is this cardboard?- pancakes, these beauties made it to our table. 
 
 
 






 Banana Nut Pancakes:
1/2 c. mashed banana
1/2 c. heaping almond meal or flour
(we use our left over almonds from making almond milk. dried and ground)
1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
3 tsp. sugar
1/2 tsp. nutmeg
1 tsp. cinnamon
1/2 c. almond milk
1/2 c. whole milk
(could probably use any milk you wanted)

Turn your seasoned skillet on first, med heat, so that it has time to warm all the way through before you start to grill the pancakes. I mash the banana first to make sure it becomes a nice creamy texture. Then in a clean, large bowl mix all the dry ingredients. Then add the banana and milks. Mix all together and they're ready to cook! I make the pancakes sand dollar sized cooking side about 6 mins. I feel like every time the heat and cook time are a little different, but that's probably just our lovely stove top being....lovely. You'll know they are ready to flip when bubbles have popped through all the way to the center of the pancake. Lena eats her pancakes plain and Skyler eats his with butter and syrup.
